From the skilled hands of medieval winemakers, Hypocras reaches us today. The recipe has come down to us from the Middle Ages through various refined evolutions. We now offer it in its white version.
To a wine base are added: Sugar, for preservation and sweetness; Cinnamon as a relaxant and antispasmodic for the stomach; Ginger, an excellent digestive and anti-inflammatory for the airways; Galangal, as a disinfectant for the gastrointestinal tract and respiratory mucosa.
The uniqueness of this white version, besides using light grapes, is the addition of hibiscus flowers, which, along with the spices, give it a sweet and fresh flavor, making it a perfect accompaniment to fish dishes, appetizers, or a delicious after-dinner treat.
HYPOCRAS, THE WINE OF HIPPOCRATES
This versatile beverage suits many occasions. Served chilled, it is ideal as an aperitif, stimulating the appetite. At room temperature, it becomes an effective digestive due to its spices and low alcohol content.
When heated, it serves as a remedy for colds, similar to mulled wine or glühwein.
Besides these uses, it is excellent as a dessert wine, perfectly paired with aged cheeses or dark chocolate with a high cocoa percentage.
It pairs well with strong-flavored dishes, such as game meat or braised meats, and is also enjoyed as a meditative wine.
